I'm going to let you into a bit of a secret here-it's a recipe for a top-notch chardonnay. Hand -pick only the best quality Yarra Valley fruit available (in 2002 the yield was around one tonne per acre) and send it up to Giaconda. Get Rick Kinzbrunner to barrel ferment it in 60% new and 40% one-year-old Sirugue barrels, using predominantly wild yeasts (a few barrels having been inoculated) and to bottle it with out filtering. Bingo! The result is a highly complex , rich wine with hints of butterscotch, vanilla, freshly baked bread, pear and apple on the nose. The palate has power and finesse, with a marvellously rich texture, balanced by a backbone of nervy acidity. Easy, eh?

Toolangi, established in 1995, is at the Northern end of the Yarra Valley. Giaconda's Rick Kinzbrunner made this Frenchified chardonnay. It is complex, unevolved, even slightly feral. Cashew, burnt-match, and mealy characters take it well out of the mainstream, and it tastes savoury, super-long and wild, revealing more with each sip.
Ageing? One to three years plus.
