2005 ESTATE SHIRAZ

This wine was made by exceptionally talented winemaker Tom Carson at Yering Station. He's massaged some really good shiraz grapes into a really interesting shiraz wine.
You have to be of a certain bent to enjoy this - but if you are, you're in for a hell of a ride. It's medium-bodied but rushes powerfully through the mouth, dark cherries and chocolate combining with violets and cedarwood to create quite an impression. It finishes bitter and twiggy which is mostly where individual differences will determine whether you like it. Its tannin profile is both expansive and perfectly formed. It's not a bruiser; it's elegant and lovely.

Toolangi's fame rests on its excellent chardonnays, grown in prime Yarra Valley sites. Shiraz is a newcomer but it promises much. This one starts off subdued but quiet complexity builds. There's a subtle hint of bacon-like oak, succulent berry fruit, hints of spices and herbs, and smooth, seamless texture backed by fine tannins.
Ageing? Drink over four years.
Food ideas: Roast topside; Lebanese-spiced winter vegetable pie.
