“Full yellow colour, bright in the glass, with a bouquet of toasted bread and developed resiny oaky accents, showing some forward evolution, the palate full and rounded, rich and firmly dry on the finish with traces of roast chicken. A big-boned style of chardonnay with a lick of tannin, which manages to retain tension and composure through to its long finish.”

‘Dans les Bois’ translates from French into ‘In the Woods’ and represents this incredible vineyard which is surrounded by natural forest.
Tasting Notes: This chardonnay opens with a puff of ‘funk’ which moves onto pastries and ripe stone fruit notes. There are hints of cashew and other white nuts as well as some lees complexities. On the palate the stone fruit theme continues with peach and nectarine. There is a real undercurrent of zesty acidity which carries the flavours nicely.
Winemaking Notes: Hand-picked on the 11th March 2022
Vinification & Elevage: Whole bunch pressed to French oak (15% new) for wild fermentation. Maturation on lees for 10 months.
Viticultural Notes: The fruit for this Chardonnay comes from a single vineyard in Yarra Junction. Chardonnay clone: 95.
2022 will be remembered for the tiniest yields in a decade resulting from poor flowering conditions in our parts of the Yarra Valley. The quality of the resultant wines of this vintage however are outstanding with both concentration and finesse.
