Tasting Notes:
Creamy notes of apple pastries and river stone. There is citrus skin of lime with lychee and a whisper of struck match. The palate has nice vitality with melon and passionfruit combining with old fashioned lemonade and fresh garden mint. There is a pleasing depth of flavour and plenty of freshness. Here is a sauvignon with interest on its side!

Picked on 27th of February
Vinification & Elevage: Fruit was crushed and pressed with full solids to seasoned French barriques, stainless steel tank, and ceramic eggs. Fermentation occurred in all vessels, followed by six months’ maturation on lees to build texture and complexity.

Sourced from a vineyard in Yarra Junction, in the Upper Yarra Valley.
