Tasting Notes: A soft, medium-bodied cool climate shiraz whose floral perfume of violets, cassis, raspberries and dark cherries reveals a hint of restrained oak, spice, pepper and charcuterie. It’s long and elegant, with a pristine core of dark berries, plums and cherries tightly knit with gentle oak and supported by fine, dusty tannins. It finishes savoury, with a refreshing acidity.
Winemaking Notes: Varietal: Shiraz - PT23 clone
Harvested: Hand-picked March 2018
Vinification & Elevage: Approximately 25% whole bunch. Fermentation in both open fermenters and closed statics. Turnovers and hand plunging as desired during the ferment. Matured in French oak hogsheads and puncheons for 6 months. A small portion (10%) was new oak with a small portion was also kept in tank for freshness.
Viticultural Notes: First established in 1995, Toolangi Vineyards is located in the Yarra Valley adjoining the Toolangi State Forest. This Shiraz is grown on fine clay loam and produces grapes which represent the unique site. Low cropped and hand harvested from 17 year old vines on A1 and D1 Blocks.
